Ingredients for Cupcake Kabobs
1. Mini cupcakes (option: two flavors of cake)
2. Large marshmallows (50 marshmallows/option: pink and white)
3. Colored sugar sprinkles (option: 4 colors)
4. Wafer cookies (2 pkgs/3 flavors: strawberry, chocolate and vanilla)
5. Simple Syrup (equal parts water to sugar boiled in microwave: 3 Tbs sugar to 3 Tbs water)
6. New Pillsbury Easy Frost (options: two flavors)
6. Plastic bags (measuring: 4w X 2d x 12h inches/ 25 bags)
7. Cute Ribbon (measuring: 4 to 5 inches/25 pieces of ribbon)
8. Skewers (25 skewers)
9. Styrofoam (approx. 15w X 5d X 25h)
TIPS:
* This recipe will make about 25 to 30 kabobs with extra leftover

* Alternative ideas to add to kabob: Rice Krispies Treats® and/or bownies
How to prepare your Cupcake Kabobs:
I really feel that it is a lot of make the kabobs and assemble all in one day. So, try making your cupcakes, marshmallows and cut the cookies a day or two ahead. The day you are heading to the party have some friends help assemble the kabobs. I had one friend assemble, one friend frost and one friend bag--it worked out great and went very fast.
- Use mini-sized cupcake baking pans. Spray tray with a nonstick cooking spray. Fill the cake batter just about half to three-fourths full. Do not fill or over fill the mini cupcake cups with batter. The cupcakes look better small and will fit on the skewer better. I did not use the cupcake wrappers because it was easier for the kids to eat. (See image below of batter in pan.)
-TIP: You can bake the cupcakes weeks ahead and freeze them or days ahead and kept in a sealed container.
2. Prepare the marshmallows
- You will need about 50 marshmallows for 25 kabobs
- Prepare marshmallows while the cupcakes are baking
A. Simple syrup
To make simple syrup, add 3 tbs of sugar to 3 tbs of water in a small bowl.
Place in microwave for just under 30 seconds or until it boils.
B. Colored Sugar Sprinkles
- Place a variety of sprinkles into small bowls. Feel free to mix the colored sugar for an interesting look.

- Dip half of a marshmallow into the simple syrup and then dip into your choice of colored sugar sprinkles.
- The sugar sprinkles will cover the wet part of the marshmallow. Place onto a flat surface to dry. (See images below.)
3. Cut the wafer cookies in half with a knife.
- TIPS: Do not break the cookie in half--looks better cut with knife.
- Keep in an air tight container until you are ready to place onto skewer.
How to build your Cupcake Kabobs
It is best to assemble the cupcakes kabobs the day you will be serving them––because the moisture from the frosting or cupcakes will make the cookies soggy.
1. Take the pointy side of the skewer and twist the skewer into the middle of the wafer cookie. I felt that 2-3 wafer cookies were best at the bottom of the skewer because it gave the kabob some support for the other items.
2. Next add a cupcake to the skewer
3. Add a small amount of frosting to the top of the cupcake. Do not add a lot of frosting because you do not want the frosting to touch the plastic bags. (See images on next page).
5. Add a sugar-sprinkled marshmallow
6. Repeat steps 1 -3. Make enough room on the skewer so the marshmallow is on the top and you can get two of each item onto the skewer. (continued on next page.)
Bag your Kabobs:
1. Once you have assembled a kabob you will need a large piece of Styrofoam to help bag, string, store, transport and display the cupcake kabobs. Push the filled skewer into the Styrofoam. Place a bag over the kabob and tie a cute piece of string at the bottom. (See images below).
